An Action is a series of recorded steps or adjustments within Photoshop that is replayed in a single step. For example, one Action (listed in your Photoshop Actions Palette) could resize, sharpen, and save an image (or a whole series of images) from a single mouse click rather than repeatedly navigating Photoshop's menus to make each of those adjustments manually.
